This month, I wanted to share a little idea I’ve been loving at home: Double Duty Meals. As time-poor parents, we all know the struggle of getting nutritious, quick, and tasty meals on the table. That’s why I’ve been focusing on meals that do double the work with half the effort.
One of my favourites is Pumpkin Soup. Not only is it warming and full of veggies, but if you make extra, the leftovers can be turned into a delicious Pumpkin Pasta the next day. Just heat the soup and mix it through some cooked pasta with a little cheese. You can even add in some cooked chicken, either homemade or a ready-to-go rotisserie one from the supermarket.
Another handy meal is Tacos. If you’re cooking beef mince, make a little extra. The next day, simply heat it up and serve it on a bed of brown rice (those microwave packets are a lifesaver). Add a can of beans like black beans or four-bean mix, and serve with toppings like cheese, sour cream, avocado, corn, or salad for a quick and easy Mexican Rice Bowl.
I hope these ideas help take a bit of pressure off during the busy weeknights and keep little tummies full and happy!
